Chicken Tomato Stew with Courgette – A Cozy Family Recipe for Every Season
The evenings are getting chilly and you are craving something warm, healthy and homemade? I have just the dish for you! This tomato stew with chicken and courgette is a family recipe that I love making all year round, but in autumn it makes everything even cozier.
The best part? Everything goes into one pot and the stove does the rest. Easy peasy!

Servings: 4
Preparation Time: 20 minutes
Cooking Time: 1 hour 5 minutes
Total Time: 1 hour 25 minutes
Ingredients:
- 1 chicken steak fillet
- ½ courgette
- 1 onion
- 1 jar of tomatoes (I use homemade tomatoes from a jar, the kind we prepare as zimnica, the Macedonian word for the preserves we make for winter)
- Water (enough to cover everything, and a little more)
- Spices: salt, Vegeta, black pepper, oregano, parsley and a bay leaf
- For the roux: about 3 tablespoons of oil, 2 tablespoons of flour and 1 tablespoon of ground red pepper
Preparation:
- Dice the chicken steak into bite-sized pieces.
- Chop the onion and slice the courgette.
- Put the chicken, onion and courgette into a pot and add the whole jar of tomatoes.
- Pour in enough water to cover everything, plus a little more.
- Add the spices: salt, Vegeta, black pepper, oregano, parsley and the bay leaf.
- Bring it to the boil and let it cook for 1 hour.
- At the end, make the roux: heat the oil in a small pan, stir in the flour, then add the ground red pepper.
- Pour the roux into the stew, stir it in well and let it boil for 5 more minutes.

Warm, healthy and full of flavour, it is the kind of dish that feels like a hug on a cold day!
Bon appétit!
