BAKED POTATO WITH VEGETABLES

What you need for this lunch:

  • 6 large potatoes (for 4 people)
  • 2 large carrots
  • 2 heads of broccoli
  • 10 large mushrooms
  • spices (salt, vegeta, curry, turmeric, ground black pepper, oregano)
  • oil

Preparation:

Peel and dice the potatoes. Do the same with the carrots, broccoli, and mushrooms. Place all the vegetables in a large pot. Pour water over them and bring them to a boil.

Once they start boiling, drain the water and transfer the vegetables to a baking dish. Season them, add a little oil, and mix everything well.

Place the baking dish in a preheated oven at 200°C and bake for about an hour.

Once it’s done, serve on a plate and enjoy the delicious flavours!
